Vegan Shakshuka
Shakshuka is a traditional Mediterranean dish that's a delicious, easy dish to make to warm the stomach and the soul. The basic recipe goes as follows: tomatoes are simmered into a sauce with a variety of seasonings in a large pan. Once the tomatoes have started to soften, some other vegetables are added (cook's choice) and eggs are poached on top of everything. Garnish with fresh herbs or greens, and serve with a side of bread to use as your spoon.
It's a yummy, warm, comfort-food dish, perfect for chilly winter weather. It's also ridiculously easy to make and can easily be made vegan by swapping out the eggs for some roasted chickpeas or tofu.
Heres the recipe for the vegan take on the dish:
Slice up half an eggplant into cubes, roast at 375˚F for 30 minutes
Roast a can of chickpeas for the same amount of time and temp with a dash of olive oil and salt
Sauté a sliced onion and pepper in a pan until soft
Add chopped garlic (2-4 cloves)
Add 4 diced tomatoes
Season heavily with 2-3 tsp salt, 3 tsp paprika, 1-2 tsp turmeric, 2-4 tsp everyday seasoning (Trader Joe's) and 2 tsp pepper
Steam spinach
Combine all the ingredients into one pan and simmer until the flavors have merged
Serve with a side of bread (pictured above are challah buns and a 10 seed rye bread. Top with nutritional yeast for an added cheesy flavor. It's also really delicious when you spread some herbed vegan cashew cheese on the bread before dipping in the Shakshuka.
