Easy Vegan Pancakes with Berry Compote

It has been a hot second since I’ve done a recipe post, so in the spirit of how quick and easy this recipe is this post will be short, sweet, and to the point.


Pancake ingredients (for 8-9 pancakes)

2 flax eggs (2 tbsp flax with 1/2 cup water)

1 cup dairy free milk

1 tbsp coconut oil or other neutral oil

2 tbsp brown sugar or maple syrup

1 tsp baking soda

1 tsp baking powder

1 cup flour

1/2 cup rolled oats

1 tsp vanilla

1 tsp cinnamon

1 tsp salt


Whisk all of the ingredients together and cook on a buttered pan on medium heat. Flip when bubbles in batter have popped (roughly 2-3 minutes per side).


Berry compote:

Heat up 2 cups of frozen berries in the microwave for 1 minute. Add 1/8-1/4 cup dairy free yogurt and mix well.


Serve pancakes with berry compote, maple syrup, and whatever other toppings of your choice.
