Yet again the business of college life has struck and I’m behind on blog posts, but while I was writing up my grocery list I though some people might be interested in what does a vegan on a budget keep in her cupboards? If you’re looking for some inspiration for meal prep, grocery shopping, and incorporating more plant-based foods into your diet check out these things I like to keep on hand to make quick, easy, and delicious dinners.
Baking Supplies:
Flour
Sugar
Brown sugar
Maple syrup / honey / molasses
Baking soda
Baking powder
Breadcrumbs
Chocolate chips
Yeast
Grains:
Rice
Quinoa
Oats
Tortillas
Bread
Bagels/English muffins
Pasta
Spring Roll Wrappers

Kale/spinach some sort of green that can be cooked

Fun veg like peas, peppers, eggplant, kohlrabi, corn, asparagus, avocado
Mushrooms
Tomatoes
Broccoli
Proteins:
Tofu
Tempeth
Beans: Chickpeas, Lentils, black beans, etc.
Vegan ‘chicken’ nuggets or bean burgers
Hummus
Snacks:
Protein/granola snack bars
Raisins
Chocolate
Crackers/pretzels (pair with vegan cheese/peanut butter/hummus/etc)
Fruit
