Perfect pea pesto pasta
In honor of the recent holiday of Saint Patricks and the upcoming start of spring I wanted to make a delicious green colored meal and this pea pesto pasta is even more delicious than in looks!
To make you’ll need:
a box of fun shaped pasta of your choice
a bag of frozen peas (16 oz or 2 cups)
1/2 block tofu (roughly 8 oz or a cup)
1/2 avocado
2 cloves minced garlic
2 tsp salt
1 tsp black pepper
1 tsp red pepper flakes
2 heaping tbsp nutritional yeast
pasta water
Start cooking your pasta following the instructions on the box.
Microwave the bag of peas until unfrozen (you can also use fresh I just used what was most easily accessible). Place half of the bag (around 1 cup) of peas into a blender along with the tofu, avocado, and spices. Add a little bit of pasta water to thin to your desired consistency, I ended up using around 1/3 cup total.
Blend until smooth and creamy. Feel free to taste and adjust salt and spice levels.
Drain pasta when al dente and keep in the same pot. Pour in sauce and remaining cup of peas, heat on low for about 5-10 minutes until everything is fully cooked and combined.
Serve and top with more nutritional yeast.
