Vegan potato nachos
A simple sheet pan and blender meal I cannot recommend enough! You’ll need:
2 peppers
1 large onion
2 large potatoes (type of your choice)
can of white beans (i used northern)
spices: nutritional yeast, cumin, tumeric, paprika, salt, pepper
Optional extras: black beans, tomatoes, zucchini, or whatever other veggies you may want to add.
Chop up 2 large potatoes of your choice into thin circles, place on a sheet pan and bake for 15 minutes at 425*F. Meanwhile, chop up the pepper and onion into thin strips. Place on baking tray with potatoes, reduce heat to 375*F and cook for another 20 minutes.
To make the sauce combine a can of white beans with 1/4 cup water, 2 large tablespoons nutritional yeast, 1 tsp salt, 1 tsp cumin, 1/2 tsp tumeric, 1/2 tsp cayenne, 1/2 tsp pepper. Optional add ins: oregano or sub vegetable broth for water. Blend everything together, poor over nachos when done cooking and broil for an additional 3-5 minutes.
Serve with avocado, salsa, (dairy free) sour cream, and enjoy!
